MEDITERRANEAN TUNA RAINBOW SALAD
Preparation time: <20 mins | Makes: 1 (large) serving
INGREDIENTS

1 cup shaved red cabbage
-
1/2 red capsicum sliced finely

1/2 cucumber sliced finely
-
A handful of cherry tomatoes quartered
-
1 tin of Sirena tuna (I used the basil oil variety)
-
2 tablespoons pitter kalamata olives
-
1/2 an avocado
-
30g Greek full fat feta sliced or crumbled
-
1 tablespoon hemp seeds
-
1 handful of walnuts (crushed in your hand)
-
2 tablespoons extra virgin olive oil (EVOO)
-
1 tablespoon balsamic vinegar
-
Cracked salt and pepper
METHOD

Add all of your salad ingredients (cabbage, cucumber, tomatoes) to a large salad bowl (for your BIG salad)

Top with all of your healthy fats and protein (avocado, walnuts, hemp seeds, olives, feta, tuna)

Drizzle with EVOO, balsamic and cracked salt and pepper

Enjoy!
This is my favourite go-to lunch for when I want something fresh, crunchy and nutritious, yet supremely satisfying. I could eat it every day!
