MEDITERRANEAN CHICKEN & BUTTER BEAN TRAY BAKE

Preparation time: <45 mins | Makes: approx. 4 serves

INGREDIENTS

  • Extra virgin olive oil

  • 3 x garlic cloves crushed

  • 2 x brown onion diced

  • 3-4 chicken breasts

  • 1 x 400g tin of butter beans

  • 1 x 400g tin of diced tomatoes (if making this with chicken breasts add an extra 200g tinned tomatoes)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil flakes

  • 200ml water

  • Sea salt and cracked pepper

  • 200g full fat Greek feta cheese

  • 1 bunch of fresh thyme or basil – rinsed and patted dry

  • To serve: steamed broccolini and cauliflower, or stir your steamed veggies through with some wholegrain pasta, quinoa or brown rice

METHOD

  1. Preheat your oven to 200°C

  2. In a large baking dish, drizzle 3-4 tablespoons of EVOO into the bottom and ensure the base is coated evenly – set aside

  3. In a large pan, sauté your onion and garlic in 2 tablespoons of EVOO once translucent (and not browned), add your chicken breasts into the pan just to brown them lightly on each side, maybe 2 minutes

  4. Transfer your chicken, onion and garlic into your baking dish

  5. Pour over your tinned tomatoes, dried herbs, water and butter beans

  6. Crumble your block of feta over the dish – you can be very rustic here, and add your fresh herbs, just tucking them in ever so slightly to allow the flavour to transpire through the dish when baking

  7. Drizzle over 2-3tbsp of EVOO before popping in the oven for 25-30 minutes or until you can see that your chicken has cooked through (quite often depends on the quality of your oven – it may take you less time than mine, so start checking at 20mins)

  8. Serve with some steamed broccoli or cauliflower, or if you’re feeling like something extra hearty, stir them through some wholemeal pasta, brown rice or quinoa - make sure you don’t forget to scoop up all of the beautiful rich sauce to serve over the top of your dish

  9. Store any leftovers in a glass container in the fridge for 2 days and re-heat fully before enjoying again!

     

    This dish is so comforting, easy to make, and satisfies everyone’s taste buds. You can’t go wrong!
