EASY BANANA SPELT PANCAKES
Preparation time: <30 mins | Makes: 4 servings
INGREDIENTS

2 x ripe bananas mashed

1 teaspoon vanilla extract

1 egg (sub with chia egg to make it vegan)

1 cup spelt flour
-
1 cup soy/plant milk ( I use Bonsoy)

1/2 teaspoon baking powder
-
1/2 teaspoon sea salt
-
1 tablespoon honey or pure maple syrup
-
1/2 teaspoon ground cinnamon

1 tablespoon butter or nuttelex (to make it vegan) for frying
METHOD

In a large bowl, mix together your bananas, vanilla, egg (or chia egg), milk and honey till combined

Add your spelt flour, baking powder, sea salt and cinnamon and whisk until combined and you’ve gotten rid of most of the lumpy bits

Preheat a large non-stick pan to medium heat - add butter or nuttelex here if your pan (like mine) is more “stick” than non-stick these days..

Ladle your pancake batter into the pan and let your pancakes cook for 3 minutes, or until easily lifted for flipping with a spatula, then flip and cook for a further 3 minutes before plating

I like to serve these pancakes with a dollop of salted butter (or ricotta), some freshly chopped just-ripe bananas and a drizzle of honey or maple syrup.
These are the perfect Sunday morning breakfast if you ask me. Enjoy!
